  • 1 tbsp Dijon mustard (optional for added tang)

  • 1 lemon (for zest or juice)

Instructions:

  1. Thaw the Lamb Shoulder overnight in the refrigerator if frozen. Pat it dry and score the fat with a knife.
  2. In a bowl, mix garlic, rosemary, olive oil, mustard, lemon zest, salt, and pepper. Rub the mixture all over the lamb and let it marinate for at least 1 hour (or overnight for best results).
  3. Preheat your oven to 160°C (320°F). Place the lamb in a roasting pan.
  4. Pour broth and soy sauce/Worcestershire sauce around the lamb. Cover the pan with foil.
  5. Roast for 3–3.5 hours, or until the meat is fork-tender.
  6. Remove foil, increase temperature to 200°C (390°F), and roast uncovered for 20–30 more minutes to get a crispy crust.
